Lemon Parsley Popcorn

Ingredients:
3 tablespoons unsalted butter
2 teaspoons minced fresh parsley
1/4 teaspoon grated lemon zest
1/4 teaspoon salt (to taste)
pepper (optional)
2 quarts hot popped corn
2 teaspoons minced fresh parsley

Directions:
1. Microwave the butter, parsley, lemon zest, salt and pepper uncovered in a small microwave-safe bowl on high for one minute or until the butter is melted.
2. Place the hot popped corn in a serving bowl and pour the butter mixture over it.
3. Toss to blend and serve immediately!

DeleteNew follower from mouthwatering mondays! That popcorn looks amazing! I love savory snacks and have been obsessed with lemon juice and fresh herbs this summer! Does the lemon juice make the popcorn soggy at all? Can't wait to try it!

thanks so much for stopping by, shannon! i think there are two ways to try it: first is to drizzle the mixture over the popcorn, which could make the top kernels soggy if you're not careful. the other technique is to put the popcorn into the bowl that already contains the liquid and toss immediately. it's probably just preference, but i prefer the first!
